This month, renowned vegan chef and restaurateur Matthew Kenney will open new vegan dining concept Casa Planta in Manuel Antonio, Costa Rica. The new farm-to-table restaurant will be located in the new IGLOO Beach Lodge hotel—a first-of-its-kind eco-friendly hotel featuring monolithic dome structures entirely covered with vegetation. Kenney came on board to oversee all aspects related to the food that is served at the hotel through Casa Planta. Sustainability is at the core of the restaurant’s mission with a focus on wellness, locally grown food, and connection to nature through plant-based food. “Opening my first restaurant in Costa Rica with my friend Youri [Benoiston] brings me home. I grew up in Maine, where I was surrounded by wildlife and developed a deep love of and connection to nature,” Kenney said. “Costa Rica is abundant with fresh aromatic fruits and vegetables year-round, and aligns perfectly with my roots and values.” Casa Planta will add to Kenney’s international restaurant portfolio, which currently includes restaurants in Argentina, Bahrain, Brazil, and Australia, and will be the first of several projects to launch in Costa Rica. In the coming months, Kenney also plans to open Hungry Angelina in Long Beach, CA, vegan italian restaurant Baia in San Francisco, and a raw vegan restaurant on the top floor of the ALO Yoga flagship store in New York City.
