Popular Shop Salt & Straw Debuts Vegan Cashew Cheese Ice Cream 

The scoop shop launches a limited-time vegan menu in January with flavors made featuring aquafaba, vegan bacon butter, and chickpea cookies.

West Coast chain Salt & Straw Ice Cream is launching a limited time “Vegandulgence” menu in January at all of its scoop shop locations. The menu—created by co-founder and head ice cream maker Tyler Malek—will feature five flavors: Toasted Coconut Chocolate Chip Cookies, Elvis’ Peanut Butter Banana Split, Candied Apricot Faux-yo, Aquafaba Marshmallow Oatmeal Moon Pies, and Heidi Ho’s Lemon Cheesecake. The flavors are crafted with artisanal ingredients such as gluten-free salted chocolate chip cookies, aquafaba marshmallow filling, Heidi Ho’s cashew Ne Chevre cheese, peanut butter “bacon” butter, cashew butter, and candied apricots. After January, the Portland, OR company Salt & Straw will transition 20 percent of its menu to permanently feature vegan flavors.
