What you need:
For the filling:
4 cups sliced nectarines
1½ cups blueberries
¼ cup orange juice concentrate
1 tablespoon freshly grated ginger
1 teaspoon orange zest
½ teaspoon vanilla extract
½ teaspoon ground cinnamon
1 tablespoon cornstarch
For the topping:
¾ cup rolled oats
⅓ cup oat flour or barley flour
¼ cup Sucanat
½ teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon ginger
¼ cup vegan butter
What you do:
- Combine filling ingredients and set aside.
- Preheat oven to 400 degrees. Place all dry ingredients in a small bowl and stir to combine. Using your fingers, work butter into dry ingredients until mixture resembles coarse crumbs.
- Add fruit filling to an 8-inch baking pan or shallow casserole dish. Sprinkle crisp topping evenly over filling.
- Bake 30 to 35 minutes or until golden brown. Allow to cool for a few minutes before serving.
