Top Chef Winner to Open Vegan Eatery in Los Angeles

Ilan Hall will open a vegan noodle and soup shop in downtown’s Grand Central Market.

This summer, Los Angeles’ Grand Central Market will welcome the city’s first all-vegan ramen and pho stall. This new noodle spot—founded by the winner of Bravo’s second season of Top Chef, Ilan Hall—represents the chef’s first foray into the veg world. Although the restaurant is not yet named, hints of its menu are ciculating: ginger pho with rice noodles, basil, and smoked tofu as well as barbecue beet buns in hoisin sauce. According to Hall, “We plan to showcase the versatility of fruits and vegetables in both traditional and non-traditional ways.” Every ramen dish will include a gluten-free option.
