Vegan-Friendly Cannabis Restaurant Opens in UK

The Canna Kitchen will offer guests an opportunity to experience cannabis through dishes such as Za’atar Roasted Cauliflower and Buckwheat and Beetroot Pancakes.

One of the United Kingdom’s first vegetarian cannabis restaurants is set to open in Brighton, UK next month. The Canna Kitchen aims to change the misconceptions about the cannabis plant by offering guests an opportunity to experience the plant through food and drink. Most items on the menu can be infused with non-psychoactive components of marijuana such as cannabidiol (CBD), cannabinol (CBN), and naturally occurring flavors and fragrances from the plant, all of which are optional. The menu features vegan-friendly dishes such as Za’atar Roasted Cauliflower with hemp heart tabbouleh, smoked eggplant, sesame kale, and CBD tahini cream; and Buckwheat and Beetroot Pancakes with roasted root vegetables, arugula, and CBD-infused cashew cheese. “I aim to create honest, balanced and vibrant food,” Chef Charlotte Kjaer said. “CBD has become something of a buzzword in recent months, but CBD isn’t the only property that makes cannabis a wonder plant. Cannabis produces a variety of compounds known as cannabinoids, many of which have not been detected in any other plant.” In addition to the restaurant, Canna Kitchen will also operate a CBD café and dispensary with infused cakes, drinks, and products.
