Easy Vegan Chocolate Coconut Overnight Oats

Satiating peanut butter, bittersweet cacao nibs, and buttery shreds of coconut offer a major upgrade to plain oats.

Breakfast doesn’t have to be boring! Adding nourishing, probiotic-rich coconut yogurt and protein-packed chia seeds to these chocolaty oats from the Nourishing Vegan Every Day cookbook take breakfast from basic to decadent.

What you need:

1 cup oats
2 tablespoons chia seeds
¾ cup coconut yogurt, divided
1¼ cups vegan milk
1 teaspoon vanilla extract
2 tablespoons dried coconut
2 tablespoons cacao nibs, plus extra to serve
3 tablespoons peanut butter
1 tablespoon maple syrup
1 teaspoon cocoa powder
¼ teaspoon salt
1 tablespoon coconut flakes


What you do:

  1. In a Mason jar, stir oats, chia seeds, ½ cup coconut yogurt, milk, dried coconut and cacao nibs. Cover and place in refrigerator overnight.
  2. In a small bowl, stir peanut butter, maple syrup, cocoa powder, and salt until smooth. 
  3. In two jars, layer oats with yogurt and sauce and top with flaked coconut and extra cacao nibs.
