Easy Vegan Mocha Caramel Overnight Oats

Get a touch of caffeine in your breakfast with these chocolaty, peanut butter, espresso overnight oats.

Some mornings, you have to step up your breakfast game to keep it exciting and leave you feeling motivated for the day. These mocha-caramel-peanut butter overnight oats from the Nourishing Vegan Every Day cookbook are just the ticket. 

What you need:

1 cup oats
2 tablespoons chia seeds
¾ cup coconut yogurt, divided
1¼ cups vegan milk
1 teaspoon vanilla extract
2 tablespoons cacao powder
2 teaspoons espresso powder or 2 shots of cooled espresso
2 tablespoons maple syrup, divided
3 tablespoons peanut butter
¼ teaspoon salt
1 tablespoon chopped peanuts
1 tablespoon coffee beans, for decorationVegNews.OvernightOats

What you do:

  1. In a Mason jar, combine oats, chia seeds, ½ cup coconut yogurt, milk, vanilla, cacao powder, espresso, and 1 tablespoon maple syrup. Cover and leave overnight in refrigerator.
  2. In a small bowl, combine peanut butter, 1 tablespoon maple syrup, and salt. 
  3. Serve in two Mason jars, layering oats with remaining coconut yogurt and peanut butter sauce. Top with peanuts and coffee beans.
