Ravinder Bhogal, chef/owner of London-based restaurant Jikoni, has collaborated with W London Hotel in Leicester Square to launch a completely vegan menu that will be served at the hotel’s bar The Perception until the end of June. Bhogal was inspired by her niece—who adopted a vegan diet two years ago—to create a plant-based menu that features global flavors with dishes such as Asian mushroom ragout with sweet potato gnocchi, besan fritters with coconut yogurt and curry leaf, and lemongrass and lime leaf sorbet served with charred pineapple and cashew and black pepper praline. “I have really enjoyed the process of working with vegetables, fruits, grains, and pulses without having to rely on the safety blankets of meat and dairy,” Bhogal said. Many businesses have begun to offer creative vegan menus to serve increasing demand for cruelty-free option, including Minneapolis-based chain Parkway Pizza, United Kingdom-based luxury department store chain Harvey Nichols, and Italian chain Zizzi.
