Detroit’s Greenspace Cafe—co-founded by vegan cardiologist Joel Kahn, MD—recently expanded its menu to include more than a dozen comfort-food entrees and snacks. In its first major menu expansion since opening in 2015, Greenspace now offers options such as Loaded Nachos with seitan chorizo and cashew sour cream, a shiitake-based Bac’n Cheezburger, a three-bean Sloppy “Joel,” and several dairy-free milkshakes and desserts. New weekend brunch dishes include the Avocado Benedict, tofu Huevos Rancheros, and French toast. “Our Monday Slider Fests, Taco Tuesdays, and happy-hour snacks receive such rave reviews that we decided to add a ‘healthier comfort food’ section to the menu,” Kahn said. “The new comfort foods are geared to those who may be visiting a plant café for the first time. We honor the opportunity to introduce them to tempeh, jackfruit, legumes, and other staples and to show how tasty plant-based eating can be.” Kahn, who opened Greenspace with his wife Karen and son Daniel, expanded earlier this year with fast-casual offshoot Greenspace Grille & Go in the Royal Oak suburb of Detroit.
