Vegan JUST Egg will soon be available on the menu at Bareburger and Silver Diner, and each restaurant chain is offering the mung-bean based egg in unique preparations. On April 18, Silver Diner will add JUST Egg to the menu at all of its 15 locations in Maryland, Virginia, and New Jersey. JUST Egg will be available as a substitution for animal-derived eggs in any item on the menu and as part of an all-vegan composed dish. The JUST Egg Benedict features the fluffy vegan egg atop toasted sourdough bread with baby spinach, roasted tomatoes, chopped tempeh, smoky mayonnaise, which is finished with a creamy vegan cheese sauce. “Silver Diner has always focused [on] serving families delicious, high-quality food and offering choices that suit a range of diets and appetites, so we’re thrilled to be among the first restaurant chains in the Mid-Atlantic to add JUST Egg to the menu,” Silver Diner Executive Chef Ype Von Hengst said. “When I tried JUST Egg for the first time, I knew it was something special and I know that many of our 75,000 weekly customers will be eager to try it.”

By the end of May, fast-casual chain Bareburger will feature the JUST Egg at all of its 34 locations on the menu as The Wake-Up Call (an all-day, all-vegan breakfast sandwich made with a Beyond Meat quarter pounder, American cheese, mayonnaise, and a “vrioche” bun). The “Get On Up” (an all-vegan wrap filled with American cheese, home fries, guacamole, black bean salsa, baby spinach, and organic garlic aioli) will also be added to the menu. “Vegan options at Bareburger are never an afterthought; we strive to create forward-thinking plant-based dishes without sacrificing flavor,” Euripides Pelekanos, CEO and co-founder of Bareburger, said. “Simply put, we always want to do what feels right for our company and our guests.”  

In 2017, Silicon Valley startup JUST launched the now popular JUST Egg at a single restaurant in San Francisco before expanding to select eateries, including vegan chain Veggie Grill and Oasis—a casual dining eatery inside the Grand Hyatt Hotel in Singapore. In the retail sector, JUST Egg debuted in September 2018 at select grocery stores and, after one week on the shelves at one retailer, outsold its liquid egg competitors—notably, chicken egg-based Egg Beaters. The company will expand retail distribution of JUST Egg to Whole Foods Markets nationwide this month.
