California-based food technology startup JUST recently hit a milestone of selling more than 8 million JUST “eggs”—an increase in sales of more than 6 million since January. The statistic is based on the chicken-egg equivalency of JUST’s vegan mung bean-based scrambled eggs. SPINS, a leading provider of data and insights for the natural, organic, and specialty products industry, shows JUST Egg as the leading liquid egg product when comparing retail point-of-sale data through the end of May of all liquid egg products (including chicken eggs) in the natural category. JUST Egg accounted for 40 percent of all dollars generated and 30 percent of all units sold. The egg replacer was also recently awarded a patent for its functional mung bean-derived composition. “From a menu of more than 300,000 species in the plant kingdom, our team came together and found one that could be transformed into a plant-based egg,” JUST CEO Josh Tetrick told VegNews. “More than four years of their hard work is detailed in this first-of-its-kind patent and I couldn’t be prouder of their commitment to our mission of building a more sustainable food system.” Earlier this year, JUST Egg became available nationwide at Sprouts and Whole Foods Market and continues to roll out its product in retail and foodservice throughout the United States. JUST also recently partnered with the largest producer of poultry in Europe, PHW Group, to distribute JUST Egg across Europe in the coming months.
