Vegan Golden Hour Pineapple-Turmeric Juice

You’ll feel absolutely glowing after drinking this sweet, golden-hued juice with a kick of heat from fresh ginger.

You can also enjoy this fresh pineapple-ginger-turmeric juice from the Cook. Heal. Go Vegan! cookbook as a mocktail on a hot day: use a ratio of one part golden hour juice and one part bubbly water. 

What you need:

½ medium pineapple, coarsely chopped 
2 medium golden beets, peeled and coarsely chopped 
3 tablespoons coarsely chopped fresh turmeric 
3 tablespoons coarsely chopped fresh ginger 
5 large carrots, finely chopped 
4 large oranges, peeled 
2 tablespoons lemon juice 
1 cup water (if blending) 

What you do:

  1. In a juicer, process pineapple, beets, turmeric, ginger, carrots, and oranges. Transfer juice to a glass, add lemon juice and serve.
  2. If using a blender method, in a high-speed blender combine pineapple, beets, turmeric, ginger, carrots, oranges, lemon juice, and water. Blend until smooth. Through a nut-milk straining bag over a large bowl, pour mixture, then strain out juice by squeezing contents in bag with hands. Pour in a glass and serve.
