This week, acclaimed chef Gordon Ramsay added a new vegan breakfast option to the menu of his Bread Street Kitchen restaurant in London. The new dish features tofu scramble, portabello mushrooms, sautéed spinach with mung beans, quinoa, and avocado served with a side of toast.

“Who knew tofu eggs were this tasty?” the chef captioned a photo of the new menu option on Instagram. While Ramsay was previously known to ridicule veganism, in recent months, the chef has had a change of heart. Last year, Ramsay cryptically tweeted, “Going to give this vegan thing a try” alongside a photo of a pizza. Since then, the chef added many vegan options at Bread Street Kitchen, including a full vegan menu during the Veganuary campaign, a Beet Wellington, a Sunday Roast, and the Impossible Burger (available at the restaurant’s Singapore location). Earlier this month, Ramsay appeared on The Late Late Show with James Corden and told Piers Morgan—a television host who continues to criticize veganism—to “go f*ck” himself before stating, “Here’s the thing … veganism is on the rise and we ought to adapt and yeah, eat a slice of humble pie.”
