Mexico City Now Has a Body Positive Vegan Café 

New York restaurateur Zack Bezunartea’s new concept Fat Vegan embraces junk food made from locally sourced Mexican ingredients.

New eatery Fat Vegan is now open in the Roma Norte neighborhood of Mexico City, Mexico. Restaurateur Zack Bezunartea conceptualized the restaurant to be unapologetically junk food-oriented, serving vegan comfort food such as burgers, tofu-based wings, nachos, and over-the-top milkshakes. Bezunartea and his partner Rodrigo Rodríguez recently moved to Mexico City from New York City, where Bezunartea operated several restaurants, including famed non-vegan Spanish chain Boqueria. Despite his plan to retire from the restaurant industry, Bezunartea opened Fat Vegan in November to pay homage to traditional Mexican ingredients sourced locally from his new home city, such as the patty for the eatery’s signature Fat Vegan Burger—which is made from mushrooms, ayocote beans, and huitlacoche. “When you think of what Mexico offers, anything you can think of: art, design, etc,” Bezunartea told Mexico News Daily. “There’s room for experimentation and having fun. That’s what got me to open a restaurant. I don’t think we would have done this in New York. Our branding and everything was a ‘f*ck you’ to the corporate restaurant world. Here you can be authentic and not contrived.”
