Restaurant chain True Food Kitchen—which boasts media mogul Oprah Winfrey as a major investor and board member—updated its menu this week to include The Unbeetable Burger. The new vegan burger is made with a beet-based patty brushed with teriyaki sauce, topped with lettuce, jicama slaw, avocado, vegan mayonnaise, and served on a flaxseed-based bun. “The inspiration behind the Unbeetable Burger came from our dedication to culinary creativity, as well as our long-standing commitment to following the principles of the anti-inflammatory food pyramid created by our founder, Dr. Andrew Weil,” said Robert McCormick, True Food Kitchen brand chef. “We wanted to focus on using only clean and unprocessed ingredients to create a dish that is traditionally thought of as indulgent. Our plant-based burger boasts an impressive nutritional profile and is perfectly balanced and full of flavor.” In addition to the new vegan burger, True Food Kitchen added a number of plant-based dishes to its fall menu, including Butternut Squash Soup; roasted Brussels sprouts with mushrooms, miso sesame vinaigrette, and chili threads; Butternut Squash Pizza topped with caramelized onion, roasted garlic, organic kale, vegan almond ricotta, and dried cranberry, sage; and Squash Pie made on a vegan graham crust and topped with coconut whipped cream.
