Vegan Croquettes

Serve these on a bun with sliced tomato, lettuce, onion, and a pickle, and you can call them veggie burgers!

What You Need for the Croquettes:

  • 1 large cooked yam or sweet potato, peeled and cut into chunks
  • 1 large onion, peeled and cut into chunks
  • 1 cup any cooked or raw vegetables
  • 1 to 3 garlic cloves, peeled (optional)
  • 1 cup any cooked whole grain (quinoa or short grain brown rice work well, but any grain will work)
  • 1/2 cup rolled oats
  • 1/2 cup wheat germ
  • 1/4 cup tahini
  • Salt to taste
  • Black pepper to taste
  • 3 or more tablespoons any combination of spices (see below)

What You Need for the Spice Combinations:

Italian Spice Blend:

  • 2 teaspoons parsley
  • 2 teaspoons oregano
  • 2 teaspoons thyme
  • 1 tablespoon basil
  • 2 teaspoons marjoram
  • 1/2 teaspoon sage

Jamaican Spice Blend:

  • 1 teaspoon garlic
  • 1 teaspoon ginger
  • 1 teaspoon mustard seed
  • 1 teaspoon onion powder
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cloves
  • 1/2 teaspoon paprika
  • 1/2 teaspoon thyme
  • 1/2 teaspoon red pepper
  • 1/2 teaspoon black peppercorns

Indian Spice Blend:

  • 1 teaspoon garlic
  • 1 teaspoon ginger
  • 1 teaspoon turmeric
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon fenugreek
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper

Creole Spice Blend:

  • 1 teaspoon cayenne pepper
  • 2 tablespoons white pepper
  • 2 tablespoons black pepper
  • 1 tablespoon salt
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1/2 teaspoon celery seeds
  • 2 teaspoons oregano
  • 1-1/2 teaspoons thyme

What you do:

  1. Preheat oven to 350 degrees. Combine the sweet potato and onion in a food processor and pulverize until finely minced. Add vegetables and garlic and continue to process until mixture is like a batter.
  2. Transfer mixture to a large mixing bowl and add remaining ingredients. Mix thoroughly, for at least two minutes.
  3. Use your hands to make patties and place on a baking sheet. Bake for 45 minutes.
