Seattle Chef Known for Cooking Meat Opens Veg Restaurant

Hitchcock Deli’s Brendan McGill will open Verjus with a focus on cold-pressed juices and farm-fresh vegetables.

Seattle chef Brendan McGill—known for his meat-centric eatery Hitchcock Deli—recently announced the opening of a new venture, a vegan-friendly eatery called Verjus on May 20. McGill attributed the change of focus to wife Heidi and told Eater, “We have been eating this way at home for a long time now, especially in the AM, and it’s no secret how good clean eating and living feels.” Amongst the many vegan options, Verjus’ menu features cold-pressed juices, smoothies, and salads made with produce grown and foraged by the owners, and a raw Chocolate Almond Date Torte for dessert. In recent months, Seattle has welcomed several vegan establishments including tiki bar No Bones Beach Club and ice cream shop and bakery Seattle Cookie Counter.
