Starting today, restaurant chain CRAVE will serve a 30-dish vegan and vegetarian menu at all of its locations in Minnesota. CRAVE partnered with Minneapolis-based The Herbivorous Butcher—the vegan shop’s largest restaurant partner to date—to create the menu, which features dishes made with vegan chicken, bacon, Italian sausage, capicola ham, herbed feta, queso dip, mozzarella, and smoked herb cheddar. CRAVE explains that the new menu—which brings The Herbivorous Butcher products to suburban locations for the first time—was “inspired by the unstoppable rise of veganism and consumer demand for plant-based menu items.” Several dishes on CRAVE’s menu are denoted with red-hued “go vegan” messaging, leading customers to explore vegan options—which also include entrees made with Impossible Burger patties. “We are committing to this menu, making it a part of our culinary experience,” CRAVE CEO Kam Talebi said. “We want our guests to experience a ‘wow’ factor when tasting our vegan menu offerings.” Opened in 2016 by sibling duo Aubry and Kale Walch as the first vegan butcher shop in the United States, The Herbivorous Butcher operates a vegan food truck in Minneapolis and ships its products—including special holiday meals—to all 50 states.
