What is in a traditional paella?
The paella we know today traces its roots to Valencian farmers in the 17th century. They would cook rice with whatever ingredients were available: tomatoes, onions, beans, and even snails. Everything would be simmered together in a wide, shallow pan over an open flame, and this hearty, one-pan meal fueled long days out in the fields.
Over time, paella spread beyond Valencia and gained popularity along Spain’s coast, where local cooks began using seafood in place of land-based ingredients. That variation, seafood paella, remains one of the most beloved versions today. Fun fact: the word paella actually refers to the pan it’s cooked in; paella is Valencian for “pan.”
