What you need:
1 tablespoon olive oil
1 onion, finely chopped
2 garlic cloves, crushed or finely grated
6 sundried tomatoes, finely chopped
¾ cup vegan sausages, sliced into coins
1 (14-ounce) can chopped tomatoes
1¼ cups vegetable broth
1 teaspoon dried oregano
3 cups fresh gnocchi
½ cup vegan mozzarella
¼ cup fresh basil leaves, stems removed
What you do:
- Preheat oven to 400 degrees. Place a large, ovenproof saucepan over medium heat and warm olive oil. Once hot, add onion and garlic. Fry for 3 minutes, but do not let brown.
- Add sundried tomatoes and sausages and fry for 1 more minute. Add chopped tomatoes, broth, oregano, and gnocchi. Stir to combine. Bring to a simmer, then cover with a lid and let cook for 10 minutes, stirring occasionally. Transfer to an oven to bake for 15 minutes.
- Remove lid and top with vegan mozzarella. Return to oven without lid and bake for 5 to 10 minutes or until cheese is golden brown and bubbling. Top with basil to serve.
