Vegan Fig-Hazelnut Energy Bars

Makes 16 bars

What you need:

1/2 cup raw almonds
1/2 cup raw hazelnuts
1/2 cup white figs (stem removed)
1/2 cup medjool dates, pitted
1 cup rolled oats
1 tsp vanilla extract
1/8 teaspoon sea salt

 

What you do:

1. In a food processor, pulse almonds and hazelnuts into a coarse meal. Add figs and dates, and blend until well-combined. Add oats, vanilla, and salt and continue to blend until mixture holds together when pressed.

2. Pour into a lined 8x8 pan. Press evenly and firmly. Chill 1 to 2 hours. Cut into bars.
