Vegan British Fudgy Chocolate Pudding

A “self-saucing” pudding is a dessert that creates its own gooey sauce as it bakes. This chocolate cake (commonly referred to as “pudding” in England) from the Vegan Chocolate Treats cookbook uses three simple ingredients to create a gooey, rich chocolate sauce for this crave-able dessert. 

What you need:

For the pudding: 
1 cup rolled oats 
¼ cup cocoa powder
½ cup coconut sugar 
¼ teaspoon salt
¼ cup coconut oil
¼ cup maple syrup
¼ cup oat milk

For the sauce: 
3 tablespoons coconut sugar 
2 tablespoons cocoa powder
½ cup boiling water

What you do:

  1. For the pudding, preheat oven to 350 degrees. In a food processor, pulse oats until a flour texture is achieved. In a bowl, combine oat flour with cacao powder, coconut sugar, and salt. 
  2. In a saucepan over low heat, melt coconut oil and stir in maple syrup and oat milk. Remove from heat, pour into dry ingredients, and gently mix. 
  3. Into an ovenproof baking dish, pour batter and set aside. 
  4. For the sauce, in a medium bowl, combine coconut sugar and cacao powder and sprinkle over batter in baking dish. Pour boiling water over top and bake 25 minutes or until cooked in middle. Serve immediately.
