On July 16, Einstein Bros. Bagels—the largest bagel chain in the United States—will begin testing the meatless Beyond Sausage Spicy Sunrise sandwich at three locations in Denver, CO. The sandwich is made with Beyond Meat’s new vegan breakfast sausage, which launched in retailers this March. “We wanted to create a menu item that will make your mouth water, so we turned up the heat,” Chef Chad Thompson, Head of Culinary Innovation at Einstein Bros. Bagels, said. “We think customers will agree that the Beyond Sausage Spicy Sunrise isn’t your average plant-based sandwich.” Unfortunately, the Beyond Sausage Spicy Sunrise is not entirely a plant-based sandwich as it contains eggs, dairy cheese, dairy-based jalapeño schmear, and is served on a cheese-topped bagel. However, customers looking to sample the Beyond Breakfast Sausage can sub the vegan patty into any sandwich on Einstein’s menu for an additional $0.60. 

“As consumer interest around plant-based meat continues to grow, we’re thrilled to team up with Einstein Bros. Bagels to test our Beyond Breakfast Sausage in the Denver area,” said Stuart Kronauge, Beyond Meat’s Chief Marketing Officer. “At Beyond Meat, we’re on a mission to make delicious, nutritious, and sustainable plant-based meat accessible to all, and partnerships with innovative brands like Einstein Bros. Bagels are an important part of that journey.”

In 2018, Einstein tested vegan schmear—made by plant-based company Kite Hill—at select locations in Missouri and tested Daiya vegan cream cheese at select locations nationwide in 2019. Ultimately, the chain discontinued vegan schmear due to poor sales. The chain does offer one lunch sandwich, the Avocado Veg Out—which features avocado, tomato, lettuce, cucumbers, and red onions—that can be ordered without the dairy-based schmear. However, Einstein does not classify its bagels as vegan due to the sugar that it uses, which is processed through bone char.
