Around the world, more people are embracing healthier, more sustainable ways of eating, whether that means going fully plant-based, cutting back on red meat, or simply cooking more whole, plant-forward meals at home. In the US, research shows that about four percent of the population follows a fully vegan diet, but many more identify as vegetarian, pescetarian, or flexitarian. In fact, over half of Americans aged 24 to 39 have reduced their intake of animal products in recent years.
With this cultural shift, it’s no surprise that celebrities are also rethinking their approach to food, not just for ethical or environmental reasons, but also to support energy levels, longevity, and overall wellness.

Actor Stanley Tucci is known for his love of Italian food, which he has explored, alongside his own heritage, in his popular travel series Searching for Italy. But while the show often sees Tucci trying other people’s food, he also loves to make his own. In July, he posted this recipe for string bean minestra, a vegan-friendly one-pot soup recipe he learned from his grandmother. “It’s this incredibly easy thing that my grandmother and my mother always made, and now I’m making it.” He added: “It’s a very light, light soup, but absolutely delicious. This with toasted bread and crunchy bread, it’s so good.”

2 Katie Couric’s Erewhon Kale Salad
Erewhon is one of Los Angeles’s most luxurious and expensive grocery stores. But if you can’t wrap your head around the prices, don’t worry: you can make copycat versions of the store’s ready-to-eat hot food bar items. Katie Couric previously made the iconic, vegan-friendly Organic Kale With White Bean Salad, for example. She combined massaged kale with olive oil, lemon juice, Dijon mustard, maple syrup, chopped avocado, white beans, and seeds. “I’m very excited because I need to eat calcium, and white beans and kale are both high in calcium,” Couric said in a video on Katie Couric Media, adding that the dish is “delicious.”

3 Kim Kardashian’s Pizza
Kim Kardashian has made no secret of the fact that she enjoys eating predominantly plant-based food. In 2023, the reality star shared her vegan cauliflower pizza recipe with Poosh, a lifestyle and wellness blog founded by her sister, Kourtney Kardashian. “With a premade cauliflower crust and fresh corn on top for a sweet pop, it’s super simple and tastes like a mouthful of summer,” notes Poosh.

4 Tabitha Brown’s Jackfruit Hoagies
Tabitha Brown is one of the biggest stars in the vegan space, there’s no question. But while she now has several lines at Target, a haircare brand, a cookbook, and much more, she still has time to post quick, easy recipes on her social media, like this tasty jackfruit hoagie dish, which she made with green jackfruit, onions, bell peppers, mushrooms, garlic, coconut aminos, smoky spices, and vegan mozzarella. “Very good,” she declared after taking a bite. 5 Kourtney Kardashian’s Brownies
Similar to Kim, Kourtney is also a big fan of plant-based recipes, and so, as well as showcasing her sister’s food, she has also published her own go-to vegan dishes on Poosh. These gluten-free rocky road brownies, for example, are one of her favorite sweet treats. “A good wellness routine is nothing without a little indulgence,” reads the Poosh post. “Good luck trying to not sneak a bite right after you take them out of the oven.”

Alicia Silverstone is arguably best known for two things: her iconic role as Cher in Clueless and her commitment to the vegan movement, which includes a lot of tasty cooking. 10 Camila Alves’ No-Mayo Slaw
According to model and entrepreneur Camila Alves, her husband Matthew McConaughey’s favorite dish is her no-mayo slaw. “The most requested recipe in the house for me to make—by Ma Mac and Matthew—would be the no-mayo coleslaw,” she told Southern Living in 2024. The dish simply combines shredded cabbage with a fresh, flavorful dressing made with lemon juice, olive oil, vinegar, and mint.

11 Carrie Underwood’s Ugly Lasagna
Country music singer Carrie Underwood told Today in 2020 that one of her go-to healthy recipes is an “ugly” lasagna, which is loaded with vegetables like spinach, bell peppers, and onions. “This is my healthier take on a comforting classic,” she explained. “I call it my ‘ugly’ lasagna because when you scoop it out of the slow cooker into a bowl, it’s not all nicely layered. 12 Jennifer Garner’s Elektra Smoothie

13 Dolly Parton’s 3-Bean Salad
In Dolly Parton’s 1989 cookbook, Dollywood Presents: Tennessee Mountain Home Cooking, Parton features a three-bean salad recipe that holds up just as well today as it did when it was first created. It’s simple, yet delicious, made with kidney beans, green beans, and yellow wax beans, as well as green onions, parsley, and a sugary homemade dressing. Kiersten Hickman, a food and nutrition writer for The Kitchn, is a big fan of Parton’s recipe. She wrote: “As soon as I took a bite, I instantly scooped more into a big bowl and ate it for lunch.”
