Margot Robbie and Colin Farrell have been spending a lot of time together recently. They are, of course, the stars of the new romantic fantasy A Big Bold Beautiful Journey, which hit movie theaters back in September. But Farrell isn’t just Robbie’s colleague; he’s also become her personal chef … sort of. His specialty? Potato chip sandwiches, or, as they’re known in the UK and Ireland, crisp sandwiches.

“We had a rehearsal period,” Farrell told Today. “A lot of that was just banter—just talking about our past—and I was talking about crisp sandwiches, which she calls ‘chippy sandwiches.’ So, I made her one.” 

According to the Irish actor, Robbie became obsessed. Soon, he was making her potato chip sandwiches all the time. “I brought one in for her every morning,” he added. “That was my job, every night, was to make her a sandwich.”

How to make the ultimate potato chip sandwich

A potato chip sandwich sounds incredibly simple, because it is—it’s just potato chips between bread and spread. You can use any type of bread you like, although most people opt for simple soft white slices. The spread is usually butter (vegan butter works perfectly, of course), and then the potato chips can be any brand or flavor you prefer.

For Farrell, Irish Taytos are a must. For British chef Nigella Lawson, who is also a huge fan of the potato chip sandwich, Walker’s Salt & Vinegar are her go-to. In an Instagram post, Lawson describes the sandwich as “perfect carb-on-carb action.” She says: “I adore bread and I adore crisps. And together, they are just rapturous.”

British food writer and activist Jack Monroe wrote about potato chip sandwiches back in 2015 for The Guardian. “What joyful memories I have,” she writes, recalling the fun experience of crushing potato chips onto bread to create the perfect crunchy, crispy texture. “Food should be fun, sometimes, as well as nutritious, and there’s nothing wrong with the occasional treat.”

It’s uncertain who originally came up with the potato chip sandwich, but one common origin story traces it back to an Irish mom in the 1960s named Noreen O’Neill. She reportedly had 18 children to feed and very little money, so she started giving them potato chips in bread. Decades later, O’Neill’s humble sandwich is so beloved that it’s now being enjoyed by Hollywood’s biggest A-listers.

If you want to join Robbie, Farrell, Lawson, Monroe, and most of the British and Irish public by indulging in a potato chip sandwich, the trick is to find the perfect potato chip flavor. The good news is that many of the best options also happen to be vegan.
