If you crave a frosting with a bit of a tang, in contrast to the über sweetness of buttercream, this simple cream cheese frosting from the Baked With Love cookbook definitely fits that flavor preference.
What you need:
1 cup vegan butter, room temperature
½ cup vegan cream cheese, room temperature
4 cups powdered sugar, divided
1 teaspoon vanilla extract
What you do:
- Into a large bowl, add butter and cream cheese and beat with a hand mixer until creamy and whipped. Sift in powdered sugar 1 cup at a time and beat, until fully incorporated. Add vanilla extract and beat until fully incorporated and fluffy. Use immediately to frost a cake or pipe onto cupcakes.
- To store, cover and keep in refrigerator for up to one day, then allow to sit at room temperature for 30 minutes before using. For best results, re-whip frosting with a hand mixer for 2 to 3 minutes before using.
