If you crave a frosting with a bit of a tang, in contrast to the über sweetness of buttercream, this simple cream cheese frosting from the Baked With Love cookbook definitely fits that flavor preference.

What you need:

1 cup vegan butter, room temperature
½ cup vegan cream cheese, room temperature
4 cups powdered sugar, divided
1 teaspoon vanilla extract

What you do:

  1. Into a large bowl, add butter and cream cheese and beat with a hand mixer until creamy and whipped. Sift in powdered sugar 1 cup at a time and beat, until fully incorporated. Add vanilla extract and beat until fully incorporated and fluffy. Use immediately to frost a cake or pipe onto cupcakes.
  2. To store, cover and keep in refrigerator for up to one day, then allow to sit at room temperature for 30 minutes before using. For best results, re-whip frosting with a hand mixer for 2 to 3 minutes before using.
