San Francisco’s meat-heavy sausage bar Belga was recently transformed into new all-vegan eatery Wildseed. Founder Adriano Paganini created the restaurant as part of his own personal health journey, where he and others on the Wildseed team, including chef Blair Warsham, have adopted a plant-based diet. Wildseed’s motto is, “Good for you, good for the planet, and good for the soul,” and its menu highlights seasonal, California cuisine such as vegan meatball masala with house-made bean-and-mushroom “neatballs,” Peruvian tofu skewers, and a mushroom-and-spinach Wildseed burger with roasted tomatoes and chipotle aioli. The eatery’s bar menu focuses on beverages made with fresh juices, herbs, and homemade tinctures and shrubs, such as the Aloe G&T with lime-infused gin, cucumber, aloe, and draft tonic. “We want to show everyone how delicious plant-based food can be—the easier we make it for people to choose a meal that doesn’t involve harming any animals, the more likely they are to make that choice again and again,” Wildseed Assistant General Manager Lauren Fitzgerald told VegNews. “Wildseed is here for everyone who feels like living their best life.”
