
Vegan Citrus Popsicles
With a few additions, humble soy yogurt transforms into delicately sweet and creamy frozen pops.
Makes 8 popsicles
What you need:
16 ounces plain or vanilla soy yogurt
1/2 cup orange juice
1/4 cup agave nectar or brown rice syrup
1 tablespoon orange zest
1 teaspoon vanilla
What you do:
1. Place all ingredients in a blender or food processor and blend until smooth.
2. Pour mixture into 8 popsicle molds and insert sticks. Freeze until solid, at least 8 hours or overnight.
TIP: Try other citrus fruit such as lemons, limes, blood oranges, or grapefruit!
