
Raspberry-Vanilla Chia Jam

Makes 2 cups
What you need:
3 cups fresh raspberries (or frozen and thawed)
3 to 4 tablespoons chia seeds
2 tablespoons maple syrup
1 teaspoon ground vanilla beans
What you do:
1. Blend the raspberries in a food processor. Add the remaining ingredients and blend for another minute.
2. Transfer the mixture to a 16-ounce Mason jar and place it in the fridge. It should take about 30 minutes to set up. This should keep in the fridge for several weeks. You can also freeze it for up to 6 months.
