Yams, Broccoli, & Avocado

My favorite winter avocado recipe is one that’s colorful and simple. This dish is so nourishing and delicious.

What you need:

  • 2 medium yams, peeled and cut into chunks
  • 2 cups broccoli florets
  • 3 tablespoons brown sesame seeds
  • 2 teaspoons Ume Plum vinegar (available in Asian markets or natural food stores)
  • 1 large ripe avocado, peeled and cut into chunks
  • Soy sauce to taste

What you do:

  1. Steam the yam chunks over boiling water for about 5-8 minutes until the yams are almost soft. Add broccoli florets and steam for another 2 to 3 minutes until yams are completely soft and the broccoli is bright green. Toast the sesame seeds in a toaster oven until fragrant, about 1 minute.
  2. Transfer the yams and broccoli to a bowl, and add the ume plum vinegar. Fold in the avocado, tossing gently.
  3. Sprinkle with sesame seeds and soy sauce to taste. Serve immediately.
